Preparing Roasted Cauliflower
Melt the butter over low heat in a small saucepan until it starts to turn golden brown. Keep stirring constantly! Preheat the oven to 150°C (300°F) and roast the hazelnuts for about 10 to 15 minutes until golden brown. Cut the cauliflower into small florets, roughly ½ centimeter in size, and place them in a baking dish. Dice the potatoes to a similar size and add them to the baking dish alongside the cauliflower. Coarsely chop the cooled hazelnuts with a chef’s knife and sprinkle them over the potatoes and cauliflower. Drizzle the browned butter over the mixture, scatter the cheese on top, and bake in the oven for about 30 minutes at 150°C. Remove from the oven, sprinkle with sea salt and black pepper, and you’ve got yourself a delicious casserole.
Cooking the Pepper Steaks
Sear the pepper steaks to seal in the juices, then cook them for about 2 minutes on each side for a perfect medium-rare. Serve alongside the cauliflower casserole and voilà...
