Ingredients

2 Breaded (Livar) schnitzels
2 Eggs
1 Large yellow onion
Half a container of mushrooms
200 grams Unsalted butter
Salt and pepper to taste

Sometimes you have those guilty pleasures you just can’t pass up. A good schnitzel is one of those meals I truly enjoy, according to Siebe Grijpma from @bbqmoods. And if you happen to have a schnitzel from a beautiful pork breed like Livar in the fridge, you’ll want to make something delicious with it right away. Here’s the recipe for a Wiener Schnitzel Holsteiner Art, which means the Livar schnitzel is served with a fried egg. I also added a delicious topping of caramelized mushrooms.

Preparing Wiener Schnitzel Holsteiner Art

Start by slicing the onion and mushrooms. Cut the onion into half rings and the mushrooms into slices. Melt a generous knob of butter in a frying pan over medium-high heat. Be careful with the temperature when using butter, as it can burn and ruin the flavor. Let it melt slowly until it starts to foam. Add the onion rings and cook until they become translucent and soft, about 8 minutes. Then add the mushrooms and stir them through the onions. Continue cooking gently, adding more butter if the mixture becomes too dry.

Now prepare the schnitzels in a separate pan. Melt another knob of butter, and once it foams, add the breaded schnitzels. Schnitzels only need a short cooking time (about 4 minutes) since they are thin. Cook until both sides are golden brown, then remove them and place them on a tray or board while you fry the eggs.

In the leftover fat from the schnitzels, fry the two eggs. While the eggs cook, season the onion and mushroom mixture with salt and pepper, or optionally a BBQ rub (I used a mix of A Touch of Sweet and A Pinch of Heat from Southern Dutch BBQ). Once the eggs are done, the schnitzels are ready to serve.

The charm of German cuisine is its “keep it simple” mentality. Presentation doesn’t have to be fancy. I like to place a layer of the onion-mushroom mixture on the schnitzel and top it with a fried egg.
