- Defrost the roe deer loin in the refrigerator a day in advance.
- Remove the meat from the fridge an hour before cooking to bring it to room temperature.
- Pat the loin dry with kitchen paper to achieve a nice crust while searing.
- Season the meat simply with salt and pepper.
- Heat a mix of butter and olive oil in a heavy pan.
- Sear the roe deer loin over medium heat until evenly browned and golden.
- Add a knob of butter along with a sprig of thyme and a piece of rosemary.
- Baste the meat by spooning the melted butter repeatedly over the loin.
