What is Ham on the Bone?

Ham on the bone is cut from the hind leg of the pig, usually from the upper thigh. Known for its juicy texture and rich flavor profile, it often graces holiday tables. Pre-prepared honey-glazed party hams are boneless and come marinated with a delicious honey glaze, making them easy to cook. What is Schweine Haxe?

Schweine haxe is cut from the upper part of the pig’s leg. It’s incredibly flavorful when properly cooked. The meat is ready once it easily falls off the bone, but it requires a relatively long cooking time. Patience pays off, as the result is worth every minute!

Are there other names for Schweine Haxe?

Yes, Schweine haxe is also known as pork shank or Eisbein. Eisbein is a classic German dish, particularly popular in Berlin. Traditionally served on a bed of sauerkraut, it’s a staple in the oldest restaurant in Berlin, ‘Zur Letzten Instanz,’ where they serve up to 80 portions daily.

Ham in the Oven

Ham on the bone is most commonly prepared in the oven, and it’s no wonder—it requires little attention, leaving you free to focus on your side dishes. For raw ham, use a meat thermometer to check doneness, but as a general guide, bake for 10 minutes per 100 grams at 170°C (160°C fan). Pre-glazed hams like the honey-glazed party ham are pre-marinated with honey and brown sugar, so all they need is an hour in the oven at 160°C. Watch the video below for preparation tips!

Ham on the BBQ

Ham can be cooked in the oven, but it’s equally at home on the BBQ! Create an indirect heat zone on your BBQ and use the same time and temperature guidelines as the oven—10 minutes per 100 grams. Again, a meat thermometer is essential. Once the internal temperature reaches 65°C, your ham is ready.

For raw ham, we strongly recommend using a meat thermometer. You don’t want a perfectly golden exterior with an undercooked center. The ideal internal temperature for ham is 65°C.
