Chicken breast. What more is there to say? Everyone knows what to do with a piece of chicken. But I do think it’s important to know where your chicken comes from. Bargain meat and factory-farmed chickens really shouldn’t be acceptable anymore, not with everything we know today. Make conscious choices — and if needed, just eat meat a little less often.

What is chicken fillet?

Chicken fillet is meat from the breast part of the chicken and is perhaps one of the most eaten types of meat in the Netherlands, if not in the world. Not surprising: it is lean, easily digestible and versatile. After all, chicken fillet works well in curries, salads, stir-fry dishes, you name it. A chicken has one breast and therefore only one fillet, but it consists of two parts. Chicken fillet as you probably know it from the supermarket or from your local butcher is actually half a fillet. This also means that chicken breast is probably rarer than you think. So stay away from the kilo-killers and opt for honest Polderhoen, of course a free-range breed. At least you can be sure that the chicken has had a good life and that also benefits the taste!
