Locally sourced, straight from our own soil! Luckily, we’ve got some truly exceptional breeds in our assortment. The Butchery’s beef boxes are filled with meat from Limousin cattle raised in the Drenthe countryside. These animals grow up in peace, with plenty of space to graze, healthy feed, and proper care. The result? Firm, flavorful beef with beautiful marbling. Naturally raised – just the way we like it. And you can taste the difference.

By working closely with farmers who, like us, value craftsmanship and animal welfare, we know exactly where our meat comes from. No middlemen – just good meat from animals that lived a good life.

Order in the morning, delivered the same evening.

Place your weekday order before 11:00 AM and we’ll deliver your box that same evening. Flash-frozen, so it goes straight into your freezer. Prefer delivery on a different day? No problem – you pick the date that works for you. And once it’s arrived, you’re all set for a while.

About the Limburg Monastery Pig

Some things you can taste right away — like the care, peace, and love an animal has received. That’s exactly what makes the Limburg Monastery Pig – better known as LIVAR – so special. This isn’t just pork. It’s top-quality meat from Dutch soil, from pigs that have truly lived well. With the highest 3-star Beter Leven (Better Life) certification and a story that says more than most cuts of meat ever could.

Quality over quantity, flavor over yield

LIVAR began in the late 1990s as a counter-movement. Five farmers from Limburg had had enough of the mass industry and bland, cheap meat. They wanted to return to real pork – full of flavor, beautifully marbled, and honestly sourced. During an inspiration trip to Spain, they saw how things could be different: happy pigs, proud farmers, and pork like they had never tasted before. That spark lit a fire. Back in the Netherlands, they set out to create their own small-scale pork concept. And so, LIVAR was born.

Monastic life for pigs

The first LIVAR pigs roamed the grounds of the Lilbosch Abbey in Limburg, cared for by the monks themselves. No joke. The monastic lifestyle — in harmony with people, animals, and nature — matched perfectly with the LIVAR philosophy. Today, the pigs live on a small number of carefully selected farms, still raised with the same values: plenty of space, straw in the stalls, peace all around.

To us, Limburg Monastery Pork easily rivals Iberico. In fact, it can go toe-to-toe with Europe’s best free-range breeds. LIVAR pork is beautifully marbled — fat equals flavor — and barely shrinks during cooking. What goes in the pan is what ends up on your plate. Incredibly easy to work with, and always juicy. Whether you're going for a pork rack, shoulder roast, or classic pork belly – the meat does the talking.

Craftsmanship at its core

Since 2009, LIVAR has had its own butchery, where the meat is processed with the same care the animals were raised with. No large-scale production lines — just pure craftsmanship in every cut. Of the original five farmers, two are still directly involved. Because when passion and skill run deep, you never let go.
