What is tartare?

Tartar, also called beef tartar, is lean ground beef that is usually briefly fried or grilled. The meat is naturally very lean, usually without much fat or connective tissue, which means it cooks quickly and remains tender. Tartares are a popular choice as part of a light main course, mainly because of the simplicity of preparation and the tender taste of the meat.

This beef tartare comes from Butchery's Drents Blond. This meat comes from the French cattle breed Blonde d'Aquitaine, but is raised in our immediate area. Of course, by farmers who treat their animals with respect.

Preparation and taste of tartare

Tartare are briefly fried over medium heat, so that the outside is lightly browned and the inside remains juicy and tender. Tart cakes are often seasoned with salt, pepper and other herbs such as paprika powder or thyme, depending on your own taste, of course. The tender meat lends itself well to simple preparations that bring out the natural flavor of the beef. Perfect for the AVG meal, for example!

Traditional and modern variations

Classic tartare is often fried and served with potatoes and vegetables. In modern variations, tartares are sometimes filled with ingredients such as cheese or herbs for extra flavor, or even marinated in a special sauce. Due to the versatility of beef, they can also be used in burgers or as part of a gourmet meal. The choice is huge, but tartare is mainly eaten with the 'lean' weekday meal.

Quick Preparation Method for Tartare

Grilling/Frying: 4 minutes for medium-rare [including turning] in oil, butter, or ghee
Sous vide: 1 hour at 50°C and then sear/grill
