What is a rack of pork/cote du pork?

Rack of pork/cote du pork is a part of the ribs with a fillet attached. It's actually a pork sirloin steak on the bone. Fantastically marbled (as befits LIVAR) and with a fat layer for even more flavor. Pork at its best!

LIVAR - Limburg Monastery Pig

One of the characteristics that distinguishes LIVAR meat from other pork is the lifestyle of the animals. The origin of brightly colored LIVAR pigs lies at Lilbosch Abbey in Echt, Limburg, where the animals were lovingly cared for by monks. Nowadays, the pigs no longer all roam around at Lilbosch Abbey, but they do on a high-quality free-range farm. The requirements for carrying the LIVAR quality mark are strict and LIVAR is constantly working to make its farms even more animal-friendly.

How to Prepare Cote du Pork LIVAR?

Season this bold cut of meat to taste with salt, pepper, or pork chop spices. Next, melt a generous amount of butter in the pan and sear both sides of the cote du pork on high heat. Then, cook on medium heat until the cote du pork is light pink in the center, reaching a core temperature of 64°C.
