Bereiding Eendenborst filet

Het klaarmaken van eendenborst is eigenlijk erg eenvoudig. Als eerst snijd je de vetkap mooi in een ruitjespatroon en vervolgens bak je hem 5 minuten op hoog vuur op de vetkap zonder olie of boter. Dit zorgt ervoor dat het vet weg smelt en geeft de eendenborst een krokant korstje. Als je dit hebt gedaan, bak je de eendenborst nog ongeveer 4 minuten aan de andere kant, waarna je het nog een paar minuten laat rusten onder aluminiumfolie.
