What is Diamanthaas?

Diamanthaas was – like Bavette and Longhaas – a forgotten cut of meat that is fortunately gaining more popularity in the Netherlands. Diamanthaas comes from the shoulder and is also known as Jodenhaas (Jewish tender). Why? Because (orthodox) Jews, due to their dietary laws, are not allowed to eat beef from the hindquarter. Meat from the shoulder is permitted, hence the name Jodenhaas! The meat is often confused with longhaas and Bavette, but Diamanthaas has been worked much less and is therefore more tender. That's why this meat is called 'Petit Tender.' If you’re a steak lover, you should definitely give Diamanthaas a try!

Why the Name Diamanthaas?

Diamanthaas is quite a mysterious but also special name for a steak, isn't it? You’re probably curious about where this name exactly comes from. As mentioned above, Diamanthaas is also known as Jodenhaas. The name Diamanthaas, like Jodenhaas, is related to Judaism and is thanks to our Belgian neighbors. In the Diamond District of Antwerp, there are many Jewish people who are allowed to eat this alternative to tenderloin!

Diamanthaas, Tenderloin, or Longhaas?

With all these different names ending in 'haas' for beef cuts, we can imagine that sometimes you might get confused. Everyone actually knows tenderloin, as it is the most famous steak cut: the tournedos. In fact, Diamanthaas is a good alternative to tenderloin. In many restaurants, Diamanthaas is often used to make steak tartare. After all, Diamanthaas is beautifully tender and full of flavor. In terms of shape, Diamanthaas also closely resembles Longhaas. Although both are flavorful, there is a significant difference in texture. While Diamanthaas has a relatively fine texture, Longhaas has a coarse texture. Choose according to your personal preference!

How to Prepare Diamanthaas?

Diamanthaas can be prepared in various ways. You can pan-fry it as a steak, but you can also finely slice it for steak tartare. Want to pan-fry it? Sure! It also lends itself very well to tataki.. But that's beside the point. Back to preparing it as a steak. First, ensure that the Diamanthaas is taken out of the refrigerator at least 30 minutes before use so it can reach room temperature. Pat the meat dry with kitchen paper before cooking and sprinkle with salt and pepper.
