What is a steak?
Steak is a general term for meat cut from muscle tissue. It is tender and lean muscle meat, particularly suitable for grilling or pan-frying. You could call them luxury frying cuts. That is, if we limit ourselves to beef, pork, veal, and lamb. Of course, there are also steaks from fish, such as tuna steak, which is cut along the bone. But that's another story. Let's stick to beef for now. There is no precise Dutch translation for the word steak. Many would say "biefstuk," but that's not entirely accurate. While a biefstuk is a steak, not every steak is a biefstuk. To be considered a steak, a beef cut must have a minimum thickness and ideally be eaten rare or medium.
What types of steaks are there?
There are a lot of different steaks to name. The most well-known are probably (sirloin) steak, tenderloin, rib eye, entrecote, and perhaps even t-bone. But nowadays, many "forgotten cuts" like bavette, hanger steak, flat iron steak, and picanha are gaining popularity. And rightly so. With these steaks—if sourced from a quality breed, which we believe applies to all beef—you can create something truly delicious. Of course, there are also pork steaks like chops and lamb steaks like lamb tournedos.
Special cuts at The Butchery
Hanger steak, onglet, denver steak, diamond fillet, chuck eye, or rump steak: the special cuts at The Butchery are no longer so "special." That is to say, they are becoming more commonplace. Fortunately, because each of these steaks has unique characteristics. Steaks you should only eat from high-quality breeds. And with breeds like Black Angus USA, Rubia Gallega, and Wagyu, you're in good hands.
What is a roast?
In England, it's a weekly tradition: the Sunday Roast. But what exactly is a roast? In the Netherlands, we know a roast as a braised cut, a large piece of meat cooked whole, often low and slow. From chateaubriand to roast beef and from lamb rack to beef wellington. A beautiful roast on the table is always festive for special occasions. Sunday Roast is traditionally the family dinner on Sundays. With a braised cut (preferably roast beef or, for something special, Beef Wellington), veggies, and roasted potatoes. A roast is also excellent for BBQ, as cooking a large piece of meat low and slow is not only enjoyable but also results in delicious meat!
A whole roast on the BBQ or in the oven is, of course, not an everyday meal. Maybe not even every week. On the other hand, a steak is always a good idea—at least on weekends. And we have them in all shapes and sizes. But what exactly defines a steak?
