How to Prepare Pork Kidneys?
Perhaps the most crucial part of preparing kidneys is cleaning them properly; otherwise, they can have a strong odor. To clean them thoroughly, remove the white kidney fat, rinse the kidneys well in water with a splash of vinegar, and let them sit overnight. Then, place the kidneys in a pan with 1 to 2 liters of water, bring to a boil, and drain. Repeat this process several times. On the final boil, let the kidneys simmer just below the boiling point for about half an hour; you can do this in vegetable broth for extra flavor. At this stage, the kidneys are technically ready to eat, but to elevate the dish, you can slice them, season with salt and pepper, dredge them in flour, and quickly fry them in a pan with butter.
