The rib eye is one of the most beloved cuts among meat lovers. It’s cut from the rib section of the cow and is recognizable by the central fat core in the middle of the steak. This feeding method results in a well-developed fat structure and a slightly sweet note in the meat. Black Angus AUS offers a fine texture and the perfect balance between fat and muscle. You can easily order this Black Angus rib eye online at The Butchery. All meat is carefully selected and triple-trimmed by our Master Butchers to ensure the ideal fat-to-meat ratio. Place your order before 11:00 AM and it will be delivered the same evening in the Netherlands and Belgium. Prefer a different delivery time? No problem – you choose what suits you best. Everything is delivered quick-frozen and vacuum-packed, so it arrives in perfect condition.

  1. Take the ribeye out of the fridge at least an hour before cooking to bring it to room temperature.
  2. Pat the meat dry with a paper towel.
  3. Heat a pan on the stove and add a generous knob of butter or olive oil along with fresh herbs.
  4. Let the pan get very hot, then place the steak in the pan.
  5. Cook the ribeye for 1 minute per centimeter per side. For a 2 cm thick ribeye, cook for 2 minutes on one side, then flip and cook for another 2 minutes on the other side.
  6. While cooking, baste the ribeye with its juices and the fresh herbs in the pan. This technique is called arroseren.
  7. Remove the ribeye from the pan and let it rest under aluminum foil for 10 minutes.
  8. Finish with coarse sea salt and pepper, and slice against the grain.

TIP: Cooking on gas? Keep the steak moving for even cooking. Cooking on induction? Leave the steak alone except for flipping once.
