The ultimate slow-cooked meat. Blade steaks come from the shoulder of the beef, a part that gets a lot of exercise. This is working meat, with plenty of connective tissue. The tendon running through the meat adds great flavor and also provides a nice texture. Blade steaks are also well-marbled, which makes the meat so tender and juicy after cooking that it falls apart.
