Shoulder chop LIVAR

What is shoulder chop?
Karchos is perhaps the most eaten pork in the Netherlands. The meat comes from the entire back, also called the loin. Shoulder chop Livar is cut from the front part of the chop and contains a lot of fat and relatively little bone. Rich in taste, because fat is a seasoning and also keeps the meat nice and juicy. With shoulder chop Livar this goes even further, because the Limburg Monastery Pig is known for its beautiful taste and structure.
Shoulder chop Livar
The Butchery is an official dealer of LIVAR pork, absolutely the number 1 in the Netherlands if you ask us. LIVAR is the only pork concept to have been awarded a 3* better life by the Animal Protection Society. The origin of brightly colored LIVAR pigs lies at Lilbosch Abbey in Echt, Limburg. There the animals were lovingly cared for by monks and they could root around in the mud all day long in the monastery gardens. Not all Livar pigs now live at Lilbosch Abbey, but they do live on high-quality free-range farms, where they are fed freshly grown Limburg grains. This origin undeniably benefits the meat. LIVAR meat is laced with fat, the flavor carrier of meat. Moreover, it hardly loses weight during preparation, which means the meat remains tender and juicy. So you're in the right place with Shoulder Chop Livar.

How to Cook Livar Shoulder Chop?
First, season the chop. This can be done in various ways. Salt and pepper suffice, but you also have specific shoulder chop seasonings. Just use whatever you like. For a nicely crispy shoulder chop, sear the meat briefly on high heat on both sides. Then lower the heat and cook – depending on the thickness – turning occasionally until done in about 10 to 15 minutes. Shoulder chop also does well on the BBQ. Because the meat is a bit fattier, it doesn't dry out quickly.
