What is Australian Wagyu?

Every meat lover is familiar with Wagyu beef (originating from a Japanese cattle breed. Wa = Japan, Gyu = cow). It might be the most exclusive beef breed in the world. The Ferrari among cattle. Japanese Wagyu (also available at The Butchery) is the absolute pinnacle, but of course, it comes with a price tag. Australian Wagyu (with an average BMR of 8+) is a beautiful alternative to Japanese Wagyu. Moreover, the meat comes from the Australian Agricultural Company, globally renowned for its prestigious beef brands. And that is certainly also due to the fine origin of the animals!

Australian Wagyu Cattle

Cattle from the Australian Agricultural Company (AACo) are born and raised on the lush, expansive plains of Australian cattle farms.

AACo is a world-renowned organization that breeds the most prestigious cattle in Australia, including our Australian Wagyu meat. AACo has one of the largest Wagyu herds in the world. The animals are born in the wild and can graze freely there. AACo manages approximately 400,000 animals, primarily in Queensland and the Northern Territory. The company owns over 6 million hectares of land (!!!), which corresponds to about 1% of Australia's area. From that land, the animals are fed in spacious feedlots for at least 200 days with a mix of the best grains, composed by the Japanese. The meat owes its popularity to the incredible fat marbling and pronounced flavor. Australian Wagyu has an intense taste and melts like butter on your tongue. Although Australian Wagyu has a natural propensity for intramuscular fat (fat between the muscles), this cattle breed's flavor is certainly also due to its fine origin. The Japanese Meat Grading Association evaluates Wagyu beef, among other things, with the Beef Marble Score (BMR). This score ranges from 3 to 12, where 12 stands for excellent marbling. Our Australian Wagyu, for example, scores an average of 8+, which is truly impressive. This beef is certainly a flavor sensation and a must-try for anyone who appreciates exceptional steaks.
