Wagyu tenderloin tournedos 8+ Australia

WAGYU TENDERLOIN TOURNEDOS 8+ AUSTRALIA
The Wagyu tenderloin tournedos from Australia is a true classic with an extra touch of depth. Cut from the center of the tenderloin, this meat is incredibly tender, fine in texture, and beautifully round in shape. With a marbling score of 8, the fat is evenly distributed throughout the meat. As it cooks, the fat slowly melts, keeping the tournedos juicy and enhancing its rich flavour. This is the kind of cut that doesn’t need much to shine.
WHAT IS A TOURNEDOS?
A tournedos is the heart of the tenderloin: the thickest, softest part of the muscle. There’s no outer fat or membrane, and the texture is smooth and refined. You sear it quickly over high heat and then let it rest. That’s really all it needs. Thanks to its shape and quality, it’s perfect to serve as a luxurious portion. The Wagyu version adds something extra: the marbling makes it even more tender and gives the meat a deep, full flavour without being heavy.
WAGYU 8+ FROM AUSTRALIA
This tournedos comes from Wagyu cattle raised in New South Wales, Australia. The animals live in a calm environment and receive a specially composed diet that promotes fine fat development. No hormones or unnecessary additives are used. With a marbling score of 8, there’s just enough fat in the meat to add richness and tenderness without being overpowering. The result is a cut that’s indulgent yet well balanced.

Baking tournedos step by step
- Remove the tournedos from the refrigerator and packaging at least an hour in advance so that they can reach room temperature.
- Pat the tournedos dry with kitchen paper and season with salt and pepper to taste.
- Put a pan on the stove with a dash of oil (or a large knob of butter).
- Place the tournedos in the pan as soon as the oil is hot and fry for about 1 minute per centimeter per side. Is your tournedos 2cm thick? Then fry it for 2 minutes per side. Would you like to bake at core temperature? Then maintain the following core temperatures: rare 48 degrees, medium rare 50 degrees, medium 52 degrees and well done 56 degrees.
- Wrap the tournedos in aluminum foil and let rest for five minutes.
TIP: Do you bake on gas? Then keep the steak moving well. On induction it is better to leave it alone, except for running.
