What is Korean BBQ?

What is Yakiniku?
Yakiniku is a Japanese grill, but also a Japanese dish (or rather a Japanese grilling method), where family and/or friends sit together around a table with a small barbecue in the center. Literally translated, yakiniku means grilled (yaki) meat (niku). In a more general sense, yakiniku stands for grilled meat, usually beef or pork. So, also meat that is prepared on a grill plate (teppanyaki), in a grill pan, or frying pan. Internationally, the term Yakiniku is often used for Japanese BBQ. It is very similar to Korean BBQ. Although Japanese enthusiasts also want to claim this BBQ style: Koreans were ahead, as meat consumption in Japan was associated only until 1871! Nevertheless, yakiniku has now become an important part of Japanese culinary heritage.
Yakiniku Meat
What meat can be considered yakiniku? Not just Japanese Wagyu (although it's also delicious). Yakiniku is about grilling meat and organ meat. Organ meat grills (Horumonyaki) even emerged. Korean dishes like Bulgogi and Kalbi are also popular in Japan, but yakiniku has developed its own style over the years. For example, beef tongue (tan) is an important dish, as well as pork belly (butabara) and beef tenderloin (Rõsu). In any case, a lot of sliced meat is consumed.
Japanese Organ Meat
Exclusive restaurants are booming in Japan, but the role of organ meat is also increasing in the Japanese BBQ tradition. Beef liver (rebu) and heart (hatsu) are, for example, very common dishes, as are oxtail and tripe, and even pork uterus. We'll leave those aside at The Butchery ;-) With this organ meat, a lot of vegetables are grilled, including shiitake, bell peppers, and eggplant.
