These rib fingers come from Japanese Black Wagyu cattle, raised in the Kagoshima region in southern Japan. The cattle are raised with care and calm, fed a balanced diet, and never treated with hormones or unnecessary additives. Only animals that score exceptionally well in all categories – fat distribution, color, texture, and taste – receive the A5 rating. With a BMS of 12, you’re at the very top of the scale. The meat is marbled down to the fibers and melts during cooking without losing its character.
