This Japanese Wagyu entrecôte from Kagoshima has an A3 grading and a BMS score between 3 and 4. That means the meat does have marbling, but without becoming too fatty or creamy. It has a fine texture, tender bite, and a rich, full flavor. You can clearly taste it's Wagyu, but with more balance. Perfect if you want to try Wagyu without immediately diving into the extremely rich A5 category.

WHAT IS AN ENTRECÔTE?

An entrecôte is cut from the sirloin of the cow. It's a tender muscle with a layer of fat on the outside and fine marbling throughout. During cooking, the fat melts slowly, adding flavor and juiciness. Keep it simple: sear on high heat, let it rest briefly, and slice. That’s often all it takes.

The meat comes from fullblood Wagyu cattle of the Japanese Black breed, raised in Kagoshima – one of the most renowned regions for top-quality Wagyu. The animals are raised without artificial additives and fed a specially formulated diet. A3 is the more accessible grade in the Japanese ranking system: still tender and flavorful, but lighter than A4 or A5. With a BMS between 3 and 4, this cut offers a balanced combination of fat, texture, and taste.
