When you spend €125 or more, we’ll ship your order completely free of charge! For sustainability reasons — and due to the high costs of frozen delivery — we apply a minimum order value of €40. Of course, you’re always welcome to pick up your order in-store, regardless of the amount.

When you buy fresh meat and put it in your home freezer, the quality declines. Not because the meat is frozen, but because it freezes too slowly. During that process, large ice crystals form that damage the cell walls of the muscle tissue. And those cells are exactly what keep the moisture inside the meat. After all, you want a juicy steak.
Due to unnecessary environmental impact and the high costs of shipping small frozen parcels, we maintain a minimum order amount of €40. Of course, you’re always welcome to pick up your order, regardless of the order value.

The Art of Craftsmanship
Online meat shops aren't unique, but online craftsmanship still is. Unfortunately, that’s not something you can see in a photo; you have to experience it. Did you know that every single steak has passed through the hands of a Master Butcher? Trimmed to perfection for the ideal fat-to-meat ratio and vacuum-sealed by hand. We don't include the weight of purge (juices from wet-aging) or the packaging when calculating the price. The result? A price per kilo for perfectly trimmed meat that is 100% grill-ready. Moreover, our meat is selected with extreme care. If you order Black Angus USA, you get USDA Prime Grade. And believe us, there is a world of difference between USDA Choice and USDA Prime. Even within the best breeds and the highest grades, not every steak is equal. Ultimately, it is the craft that separates the wheat from the chaff. At least, that’s our vision, and we stick to it—even online. Our credo: if you eat meat, do it right. Choose quality and honest origin. We want to prevent people from comparing apples to oranges. Buying meat based solely on price is a choice, and we respect that. However, The Butchery is built on quality, craft, and honest meat. This comes with a slightly higher price tag, but the price-quality ratio is genuinely far superior. Perhaps that means eating meat one day less a week... at least, that’s our view.
Triple Trimmed for the Best Price-Quality Ratio
Our way of working results in a **25% weight advantage**, meaning you get more value for your money. You don't pay for unnecessary fat. You don't pay for the moisture from wet-aging. There is zero cutting waste. It might not be the absolute cheapest meat, but it is the best price-quality ratio. This makes a world of difference, especially with exclusive top-tier breeds like Japanese A5 Wagyu. If you want to experience an exclusive steak, you want the real deal. Naturally, the price per kilo of an untrimmed Wagyu ribeye is lower than a trimmed one, simply because it contains much more (cheap) fat and requires no labor. It sounds logical, but this is hard to convey online. The video above shows how we professionally triple-trim every steak, but the difference is something you truly have to experience for yourself.
Not All Steaks Are Created Equal
Take the picanha, a popular cut and an absolute BBQ favorite known as the "Queen of Steaks." As soon as the meat arrives, our Master Butcher immediately inspects it for quality and maturity. Once approved, we make the picanha 100% grill-ready:
Double-trimmed, giving you more value for your money.
Silver skin is removed from the meat side.
The fat cap is halved so it has exactly enough fat—just the way I [Bert-Jan] like it.
Hard edges are trimmed.
After trimming, the picanhas are vacuum-sealed by hand. This means no purge (moisture) from aging affects the weight or the price per kilo. Again: more value for your money.
Weight Guarantee: The packaging is not included in the weight, so you only pay for the meat!
Flash-frozen: Frozen within the hour to optimally preserve quality. This also ensures less moisture loss after cooking.
Delivered with dry ice in an insulated bag, ensuring the meat arrives deep-frozen. Not the cheapest way, but certainly the safest.
All in all, a significant amount of labor and a healthy dose of passion go into every steak. That craftsmanship, combined with carefully selected meat from the world's most beautiful breeds, is what we believe makes the difference.
