Literally translated, Wagyu means Japanese cow (Wa = Japan, Gyu = cow). The real deal Wagyu also comes from Japan and has only recently been exported. Moreover, the Japanese Meat Grading Association imposes very strict standards. It is super exclusive and has unparalleled marbling. The Japanese Black from Kagoshima A5 BMS12 and A4 BMS8+ are absolutely top of the line. We consider this one of the most beautiful and most exclusive Wagyu breeds available.
The Japanese Meat Grading Association assigns Wagyu certain values with the scores below.
- Grade A1: Low – marble score 1
- Grade A2: Below average – marble score 2
- Grade A3: Average – marble score 3 to 4
- Grade A4: Good – marble score 5 to 7
- Grade A5: Excellent – marble score 8 to 12
Additionally, a distinction is made in genetic score. Full Blood Wagyu is FB (Full Blood). That is the meat we sell at The Butchery. Other scores are:

Finally, the meat is evaluated based on the following aspects:
> Color and brightness of the meat
> Firmness and texture of the meat
> Color and quality of the fat
Once each element has been evaluated, the carcass is assigned the final grade.

From Kagoshima cattle, you can find various Wagyu steaks at The Butchery. Entrecote A5 BMS12 and A4 BMS8, ribeye A5 BMS 12, picanha, and ossenhaas (tenderloin) are among those we have in stock from Japanese Wagyu from Kagoshima.
