What is Bone-In Ham?

Bone-in ham is cut from the back part of the pig, usually from the upper leg. It is known for its juicy texture, rich flavor profile, and is often a centerpiece on festive tables. The honey-glazed party ham, pre-cooked and coated with a fantastic honey marinade, only needs an hour in the oven at 160 degrees at home. The raw party ham is also boneless, making it very easy to slice!

What is Schweine Haxe?

Schweine haxe is cut from the upper part of the pig's leg. It’s incredibly delicious when properly cooked. It’s ready when the meat easily falls off the bone, but this can take some time. Schweine haxe requires a relatively long cooking time, but the wait is worth it—highly recommended!

Is there another name for Schweine Haxe?

Yes, Schweine haxe is also known as pork knuckle or eisbein. Eisbein is a typical German, or more specifically, a Berlin delicacy. It is traditionally served on a bed of sauerkraut. At Berlin’s oldest restaurant, ‘Zur Letzten Instanz,’ up to 80 servings are made daily.

Bone-In Ham in the Oven

Bone-in ham is most often prepared in the oven, and it’s no surprise why. It requires minimal attention, allowing you to focus on side dishes while the oven does the work. Ideal! For the raw version, use a meat thermometer to ensure the ham is cooked perfectly. As a guideline, cook for 10 minutes per 100 grams at 170 degrees Celsius or 160 degrees Celsius for convection ovens.

Bone-In Ham on the BBQ

Bone-in ham can be prepared perfectly in the oven, and if it works in the oven, it can work just as well on the BBQ! Create an indirect heat zone on the BBQ and follow the same cooking times and temperature as for the oven—10 minutes per 100 grams. Again, use a meat thermometer! The ham is done at an internal temperature of 65 degrees Celsius.
