What is LIVAR?

Have you ever heard of LIVAR pork, also known as Limburgs Kloostervarken? In our opinion, it is the finest Dutch pork concept available. A pork producer with a mission, driven by passion for the craft and respect for people and the environment. Not without reason, LIVAR has been awarded the 3*** Better Life certification by the Dutch Society for the Protection of Animals. ‘Flavor as a reward for good care’ is their motto, and it’s no exaggeration. LIVAR pork is in a class of its own, and in our opinion, it rivals the renowned Spanish and Italian free-range pork breeds. Its marbling, the ultimate flavor carrier of meat, ensures minimal weight loss during cooking. Exceptionally tender and juicy meat! LIVAR pork is celebrated for its exceptional taste and quality.

The Origin of LIVAR Pork

The origins of LIVAR pork lie in the Limburg monastery farm, Abdij Lilbosch, where the pigs were lovingly cared for by monks. The monks' lifestyle, rooted in respect for people, animals, and the environment, aligns perfectly with LIVAR's vision. How did this vision come about? In the 1990s, the prevailing belief was: the leaner the meat, the better the yield. However, in 1999, five Limburg farmers came together to return to the roots of pork: quality meat packed with flavor. The five farmers traveled to Spain, where they were inspired by small-scale farms with unique breeds. They saw happy pigs and equally happy farmers. Most importantly, they tasted pork unlike anything they had experienced before. Back in Limburg, their quest for the ultimate pork concept began. And that’s how it all started...

LIVAR Today

The taste, quality, and origin of LIVAR pork quickly gained recognition, leading to a need for larger facilities beyond the monastery. Carefully selected small-scale farms now house the pigs in similar conditions. Since 2009, LIVAR has even operated its own butchery where the pigs are processed into top-quality meat. Of the five farmers who initiated this beautiful concept, two remain actively involved: Hans Corsten and Frans de Rond. The pigs continue to grow under strict supervision, and ongoing efforts are made to make the farms even more animal-friendly.

The 7 LIVAR Promises

As mentioned, LIVAR has been awarded the 3*** Better Life certification by the Dutch Society for the Protection of Animals. The pigs are raised with respect, and the producer has outlined the following seven promises:

  1. The pigs roam outside with curly tails. Logical, you’d think, but unfortunately, that’s not always the case elsewhere. At LIVAR, it’s a promise!
  2. The pigs are born and raised in Limburg and are fed regionally grown grains.
  3. Although not all pigs live at the abbey, they are all raised respectfully under the supervision of the monks.
  4. LIVAR pigs have a good life, which unmistakably enhances the flavor.
  5. LIVAR meat is prepared exclusively by skilled butchers.
  6. LIVAR meat is available at high-quality restaurants and specialty stores.
  7. A visit to our farms is always possible.

Buying or Ordering LIVAR?

The Butchery is an official dealer of LIVAR, and we are incredibly proud of it! From pork chops to spareribs and from pork shoulder to fresh sausages: The Butchery offers a wide range of LIVAR meat and delivers throughout the Netherlands. We deliver from Monday to Friday between 17:00 and 22:00, ensuring evening delivery. You can choose your delivery day, and if you order before 11:00, you can have your LIVAR meat delivered the same evening. Quickfrozen, ensuring optimal quality preservation!
