What is Chuck Eye Steak?

You might have never heard of it, the chuck eye steak. In the Netherlands, this steak is not the most well-known cut. If you look closely at the chuck eye steak, it might look familiar. In appearance, it closely resembles the ribeye steak. Although both have an 'eye' in the steak, they are cut from different parts. The ribeye is cut from the fine rib of the cow, located in line with the entrecote. On the other hand, the chuck eye steak is cut from the shoulder of the cow starting from the 5th rib and is usually thicker than a ribeye steak. Compared to the ribeye, the chuck eye steak is less tender but more than makes up for it with its rich flavor. The best way to describe its taste is as rich. To make the steak more tender, you could marinate it before grilling.

What is the Difference Between Chuck Eye Steak and Poor Man’s Ribeye?

There is no difference between chuck eye steak and poor man’s ribeye. This is because they are different names for the same piece of meat. As you might have read above, ribeye and chuck eye steaks look quite similar. Chuck eye steak is, compared to ribeye, just much more reasonably priced. In terms of flavor intensity, structure, it is less tender, and it is affordably priced: a poor man’s ribeye! In America, ribeye is eaten during weekends or special occasions, while chuck eye steak also frequently appears on the daily dinner table.

How to Prepare Chuck Eye Steak?

Have you baked a ribeye before? Great! The preparation of a chuck eye steak is not much more complicated. Because the chuck eye steak is generally less tender than the ribeye steak, you could marinate it with a marinade that contains acids and salts. The acids help break down the muscle fibers in the meat, making it more tender. Salting also helps break down the muscle fibers, which is beneficial for your chuck eye steak! A chuck eye steak can be prepared in various ways: on the BBQ, in the pan, sous vide, or even in the oven!

Does a Chuck Eye Steak Contain Bone?

A chuck eye steak does not contain a bone. Although the chuck eye steak is cut from a rib, the bone is removed when it is portioned into a grill-ready chuck eye steak at the butcher. Our butchers expertly handle the steak, ensuring it is completely grill-ready when delivered to your home. It is entirely free of membranes, etc., which you might otherwise chew on. Ready to go straight to the pan!

How are the Flavor and Texture of Chuck Eye Steak?

The flavor and texture are somewhat different from what you are used to with ribeye. The flavor is slightly more intense, and the texture of the chuck eye steak makes the meat less tender compared to ribeye.

What Wine Goes with a Chuck Eye Steak?

A beautifully grilled chuck eye steak on the menu? A good wine will take your steak to the next level. With the flavor of chuck eye steak, which has an intense beef flavor, it pairs perfectly with a nice, robust red wine with a sturdy structure. Consider wines such as Cabernet Sauvignon, Sangiovese, or Syrah. If you choose to add a sauce to enhance your steak, make sure to match your wine with the sauce. With a classic béarnaise sauce, it's best to opt for a more mature wine like a Rioja Reserva..

Buying Chuck Eye Steak Online

A less known steak like chuck eye steak, also known as poor man’s ribeye, is not something you’ll easily find at the butcher around the corner, precisely because it's not a common steak. Just like rump steak and Denver steak, you can find it at The Butchery. Buying steak online is super easy and super fast! Place your order in the morning before 11 am? Then you'll have it at home the same evening. Quickfrozen, ensuring optimal quality preservation! Buying chuck eye steak online is thus a piece of cake.

Chuck Eye Steak Quickfrozen Delivered

At The Butchery, all the meat you order is delivered quickfrozen to your home. Want to know how this process works? We'd be happy to tell you more! Once the meat arrives, it goes directly to the production department. There, our experienced butchers get to work with the finest meat, such as cutting the chuck eye steaks to size and removing any membranes. This makes the meat grill-ready, so you don't have to do anything at home except thawing and preparing it for consumption.

After carefully vacuum-packing the meat in vacuum bags, we label it with a product sticker containing useful information like the expiration date and product name. Then, the meat is frozen in a special way, preserving nutritional values and minimizing quality loss. In fact, the quality loss is even less than if the meat were to sit in a local butcher’s display counter for a few days.

So, you receive your meat quickfrozen from us. If you need it within a few days, we recommend letting it thaw in the refrigerator. Otherwise, it can simply be stored back in your freezer at home!
