What Is a Sausage?

A sausage is a type of meat product made with a filling of pork, beef, or sometimes veal, encased in a natural casing. You can identify natural casings by the strings attached to the sausage. If you see strings, it’s made with real casings, which we definitely prefer. Our sausage makers exclusively use natural casings because they provide that perfect snap when you bite into them. Our sausages are slightly thicker than the thin sausages you might find elsewhere. All of our sausages are crafted in-house by our master sausage maker, Henri van Heerde, who has been perfecting his craft for years.

What Kind of Meat Is Used in Sausages?

Most of the sausages in our range are made from premium pork breeds such as LIVAR***, Iberico Cerdo, or Duke of Berkshire. We also offer sausages made from Black Angus USA beef. What these breeds have in common is a focus on animal welfare and quality of life, which you can taste in the final product.

Where Does the Name "Sausage" Come From?

The name "sausage" doesn’t have an exciting origin—it’s quite descriptive. It refers to a meat product that’s cooked by frying. That’s it! You can fry sausages on the BBQ or in a pan. They’re most commonly pan-fried to serve alongside vegetables and other meats. Lately, sausages have been gaining popularity on the BBQ, and why not? The smoky BBQ flavor adds an extra dimension to the taste.

How Are Sausages Made?

At The Butchery, our sausages are made in-house at our facility in Wanneperveen. The ingredients for the filling are carefully mixed according to our own recipes, and the filling is expertly stuffed into natural casings. Immediately after production, the sausages are vacuum-packed in sets of four, labeled, and frozen using a special method to preserve their quality, taste, and texture.

How Do You Cook a Sausage?

The number one rule for cooking sausages: NEVER USE A FORK. Poking a sausage with a fork during cooking allows the juices to escape, leaving the sausage less juicy than it should be. You can fry sausages on the stove in a pan with some oil or butter. First, sear the sausages until golden brown on the outside, then lower the heat and let them cook for about 10-15 minutes, turning them occasionally with tongs or a spatula.

In the past, people would often boil sausages in water before frying them to prevent the casing from bursting.

Animal welfare is important to us, and all of our pork comes from breeds with at least a 3*** Better Life certification from the Animal Protection Association. The meat is processed right after arrival, expertly portioned, and carefully vacuum-packed with product labels.
