Iberico Pork
It probably sounds familiar: Iberico is one of the most flavorful free-range pork breeds in the world. They are dark in color and have black hooves, quite different from the pigs commonly seen in the Netherlands. Ibérico pigs, or Cerdo Ibérico, originate from the southwest of Spain, where they live a good life. They roam freely and feed on acorns, grass, herbs, roots, and sometimes olives. During the dry summer months, they are supplemented with grains. The fattening process begins in autumn when the acorns (bellotas) from the surrounding cork and holm oak trees fall. These acorns are what give Iberico pork its characteristic taste.
El Cerdo Ibérico
The Ibérico breed is a purely Spanish breed and is not crossbred in other countries—it's impossible. Iberico is Iberico, much like champagne is champagne. The pigs primarily live in dehesa, or open forest, where many oak trees grow. These open forests are found in Extremadura and parts of western and northern Andalusia, as well as western Castile. Here, Iberico pigs consume kilos of acorns daily from October to March, growing quickly to an impressive 160–180 kilos. Iberico pork is rich and fatty, with a distinctive herbal, nutty flavor. Its fat is predominantly monounsaturated and polyunsaturated, making it nutrient-rich. Another advantage of this breed!
Pata Negra
If you’ve been to Spain, you’ve probably indulged in Pata Negra. This delicious Spanish ham is often the first thing people think of when they hear about Iberico pork. And for good reason—it’s amazing! But this extraordinary breed of pigs has so much more to offer.
Iberico Pork
There are specific cuts of pork that you simply must try from the Iberico pig. Secreto Iberico is one such cut. Not only because it’s a very special part of the Iberico pig, but also due to the unique cutting techniques used in Spain. Secreto Iberico is a highly marbled pork steak, almost comparable to Wagyu beef. Pluma Iberico is another exceptional cut you should taste. But don’t overlook rib fingers, spareribs, sausages, and more. In fact, all Iberico pork is absolutely worth trying!
