Livar is Limburg monastery pork and has its origin at the monastery farm of Abdij Lilbosch in Echt. The pigs were cared for there by monks and could root and roll in the monastery gardens. Livar has received the 3 star Beter Leven quality mark from the Dutch animal protection organisation. The animals are born and raised in Limburg and are fed regionally grown grains. Not all pigs live at the abbey, but they are kept with respect under the watch of the monks. The pork is marbled with fat, and that fat carries flavour. During cooking, Livar stays juicy and barely loses weight.
