What are St Louis style ribs?

St Louis Style ribs are belly ribs, so cut from the belly of the pig. In the United States, this is actually what they mean by spareribs. So not the baby back ribs that we serve as spare ribs in the Netherlands. Belly spare ribs are cut according to the St. Louis Style, a special way of cutting that arose from the needs of competitive BBQ'ers in the States.

St Louis style ribs are cut from the middle part of the rib cage, where the breastbone and excess cartilage have been removed. This gives a uniform cut, which is perfect for even cooking on the grill or in the smoker. The meat is of even thickness and produces little waste. Moreover, they are beautiful ribs in the presentation! Nice large, flat racks that can be prepared perfectly low and slow on the BBQ.

Difference Baby Back Ribs and st. Louis Style?

The biggest difference between baby backs and st. Louis style ribs means that baby back ribs are cut from the part of the ribs closest to the spine. The strands of Baby back ribs are smaller, more curved and often less fat than belly ribs. St. Louis ribs offer a bit more meat than baby back ribs, and the fat veining ensures good flavor development during preparation. This makes them ideal for low & slow BBQ techniques, such as slow smoking or grilling. Evenly cut makes these ribs easier to prepare without cooking unevenly. And they also present beautifully!

How to Prepare St. Louis Style BBQ Ribs?

The name says it all: on the BBQ! The first step in preparing the ribs is to bring them to room temperature. Remove the membrane from the underside of the ribs and rub them generously with a dry rub. Let the spices marinate for several hours, or leave the ribs wrapped in plastic wrap in the refrigerator overnight. 

Now it’s time to fire up the BBQ! Preheat the barbecue to a temperature of approximately 105 to 120 degrees Celsius. Maintain this temperature throughout the cooking process. Place the BBQ ribs on the grill, but not directly over the fire—a drip tray under the ribs is recommended—and cook the ribs for 2.5 to 3 hours. Remove the ribs from the barbecue and wrap them in aluminum foil. Cook the ribs for another 1.5 hours at the same temperature. Almost done… Unwrap the ribs after 1.5 hours, coat them with a good sauce, and put them back on the grill for another hour. Finish with another layer of sauce and enjoy your meal!
