Livar is Limburg monastery pork and has its origin at the monastery farm of Abdij Lilbosch in Echt. The pigs were cared for by monks and could root and roll in the monastery gardens. Livar has received the 3 star Beter Leven quality mark from the Dutch animal protection organisation. The animals are born and raised in Limburg and are fed regionally grown grains. Not all pigs live at the abbey, but they are kept with respect under the watch of the monks. Livar pork is marbled with fat, and fat carries flavour. That is why the meat stays juicy and barely loses weight during cooking. You can taste that in this sausage too.
