Surf and turf of flat iron steak and grilled shrimp

Together they create a luxurious and incredibly flavorful BBQ experience that’s easy to make, yet guaranteed to impress at the table.

Preparing Surf & Turf
- Clean the shrimp by making a shallow cut along the back with a sharp knife and removing the vein.
- Marinate the shrimp with oil, chili flakes, garlic, ginger, pepper and salt. Keep them chilled.
- Rub the flat iron steak with some oil and your favorite rub.
- Prepare your BBQ for direct heat at around 200–225°C, preferably with a cast iron grate for those beautiful grill marks.
Preparing Surf & Turf
- Place the flat iron steak on the hot grill and sear both sides until nicely browned.
- At an internal temperature of 46°C in the thickest part, remove the steak from the BBQ.
- Let the flat iron steak rest on a wire rack, loosely covered with aluminum foil.

- While the steak is resting, grill the shrimp briefly until they turn a nice orange color. Be careful: shrimp cook in just a few minutes—overcooking will make them dry.

Serving Surf & Turf
- Slice the flat iron steak and optionally add a bit of herb butter.
- Serve on a large platter with the shrimp arranged around it.
- Grab plenty of napkins, because this is meant to be eaten with your hands.
