What is a Cordon Bleu?

A cordon bleu is a pork tenderloin slice, chicken breast, or beef slice filled with a meat filling and cheese. The slice of meat filling is optional, but there is always cheese in a cordon bleu. Additionally, the cordon bleu is usually breaded to give it a crispy coating. The traditional version of the cordon bleu consists of pork tenderloin or pork schnitzel filled with ham and cheese, but actually, you can fill the cordon bleu with whatever you like. That’s why we have developed five flavors of cordon bleu that are sure to suit your taste!

Why the Name Cordon Bleu?

Where does the name cordon bleu come from? There are different theories about it. One says that the name Cordon Bleu originates from 1578 and comes from ‘L’ordre des chevaliers du Saint-Esprit’ (the highest noble knightly order). Le cordon bleu (blue ribbon) was a kind of distinction that knights received when they had accomplished something special. Since then, the term has also been used for food prepared by the best chefs and according to the highest standards.
Others believe that Cordon Bleu gets its name from the famous French culinary school: l’Ecole Le Cordon Bleu. The filled meat would have earned its name in a French cooking competition.
Finally, there is the story that ‘cordon’ comes from cord or wrap and that this is folded around the ham/cheese package. ‘Bleu’ comes from the method of preparation. In French cuisine, they have: bleu (meat still completely raw inside), saignant, à point, cuit, and bien cuit (well done). Of course, this method of preparation is not recommended for pork cordon bleu and chicken cordon bleu and thus more applies to veal or beef cordon bleu. Is Cordon Bleu Gluten-Free?

Generally, a cordon bleu is not gluten-free. This is because the crispy coating of the cordon bleu consists of breadcrumbs, and breadcrumbs contain gluten. Therefore, we have developed a gluten-free variant of the cordon bleu: the variant filled with mozzarella, sun-dried tomatoes, & pesto. You can order this from both Livar and Blonde d’Aquitaine or free-range chicken breast. Instead of breadcrumbs, we have marinated the cordon bleu with an allergen-free marinade.

How to Prepare Cordon Bleu?

Cordon bleu is usually prepared in the pan, but it can also be perfectly cooked on the BBQ! The cooking time varies depending on the type of meat and the thickness of the cordon bleu. It is important that the chicken cordon bleu and the pork cordon bleu are well cooked, whereas beef cordon bleu is best eaten medium and is even tastier if it is not well done.
Start with a thick knob of butter; only when the butter is bubbling can the cordon bleu go into the pan. Fry it nicely brown on all sides without moving the cordon bleu too much. In the case of pork cordon bleu or chicken cordon bleu, then lower the heat and let the piece of meat cook through for 10 minutes with the lid half on the pan. Chose a beef cordon bleu?
