Preparing the Tex Mex Beef Tortilla
We used skirt steak for the tortillas, but you can always opt for ground beef if you prefer. If you choose steak, skirt steak is ideal—it’s no coincidence they call it fajita beef! Slice the skirt steak (against the grain) into strips and stir-fry briefly over high heat with some olive oil. Remove from the pan and set aside.
Slice the bell peppers, onion, and lettuce into strips or small pieces. Preheat your oven to 180°C (350°F) to warm up the tortillas, or warm them in a pan on the stove—whatever you prefer.
Preparing the Salsa
Dice the tomato, add the lime juice, and stir in the cilantro leaves. Season with sea salt to taste.
Cooking the Tex Mex Beef
Stir-fry the pre-sliced bell peppers and onion briefly in olive oil, then add the spice blend and 100 ml of water. Let it simmer for a moment, then add the corn and the steak back to the mix.
Assembling the Tortillas
Place the warmed tortillas (from the oven or pan) on plates, and layer them with lettuce and the beef mixture. Top with tomato salsa and a dollop of sour cream, then roll up the tortillas. Simple as that! For an extra touch, you can sprinkle shredded cheese on top, but we try to skip the cheese during the week—after all, if every day feels like Sunday, it’s never really the weekend ;-)
