What are coquilles?
Coquilles are the edible part of the St. James scallop, harvested from clean, cold seas. The meat is both firm and creamy, with a delicate flavour that many find especially appealing. A quick sear in the pan is enough to give them a golden crust on the outside while keeping the inside tender and moist. They pair beautifully with earthy flavours like cauliflower or parsnip, but also with bright citrus notes such as lemon or lime.
