What is Shabu Shabu?

You might know Shabu Shabu from an all-you-can-eat format where – ironically – sushi is served, but in fact Shabu Shabu is a Japanese dish similar to fondue. Japanese hot pot, indeed. Shabu Shabu is about enjoying a meal together, where everyone cooks their own – very thinly sliced meat (2 mm), preferably natural Wagyu, but a mix of meat types is even better – in a pot of boiling hot broth. In that same broth, cabbage, leeks, and carrots are also cooked. Udon noodles and mushrooms are also cooked. Shabu shabu is traditionally served with ponzu and/or sesame sauce.

Japanese Cuisine

Because the sushi chain Shabu Shabu has been widely rolled out in the Netherlands, this traditional dish has received a misleading reputation. If you ask us? We are big fans of the Asian cuisine in which shabu shabu plays a major role. The way the shabu shabu meat is sliced is very specific, and I (Bert-Jan Lantinga) had to undergo training to master it.

Korean BBQ

I myself lived in Singapore for a year, and there the Asian cuisine naturally comes together perfectly and often at a high level. Not only Japanese or Chinese hot pot, but also Korean BBQ is extremely popular there. Kalbi short ribs, for example, or chopped short ribs are a beloved BBQ dish there, as are karubi ribs: chopped short ribs without the bone. All naturally prepared in that authentic Asian Style manner. Lots of sesame, soy, ginger, ponzu, etc. And with noodles or rice as a side dish!

Preparing Shabu Shabu

We have increasingly received requests to cut shabu shabu meat to order. The same applies to Kalbi short ribs. This undoubtedly relates to our large Wagyu assortment. And because we ourselves are big enthusiasts, we couldn't help but comply with that request. In addition to beef, we have also thinly sliced Ibérico pork meat. Although shabu shabu meat is traditionally intended for Japanese hot pot, this meat is also fantastic for hot & fast preparation. Just briefly cook in the pan and then serve with soy and sesame sauce. An amazing snack and a beautiful appetizer! In short: we are continuously expanding our shabu shabu, kalbi, and karubi assortment. The Japanese cuisine is incredibly popular in the Netherlands, and we wholeheartedly support that. And what about Japanese ramen or Vietnamese Pho, for example? All amazing dishes that you can prepare with thinly sliced meat that we – perhaps mistakenly – simply call shabu shabu meat for convenience.
