After all, it performs very well as a Sunday roast too. Impressive to serve and super tender thanks to the beautiful marbling in the meat.

Should the Bone Stay in When Preparing the Holiday Roast?
Of course not necessary, but if you prefer to prepare a roast without bone, you could take a look at the ribeye roast. After all, it no longer has a bone, and the marbling is very similar to the 4 bone holiday roast. We strongly recommend keeping the bone in during preparation. The bone imparts flavor during cooking, provides a visual element at the table, and can be easily removed after cooking.
How Do You Prepare a 4 Bone Holiday Roast?
First, choose a high-quality piece of meat; with The Butchery's meat, you’re definitely in good hands. Then choose a cooking technique. Do you want to prepare it on the BBQ? Or not? You can choose from, for example, low & slow, reversed sear, or sous vide. For a 4 bone holiday roast, maintain a core temperature of 54 degrees for a medium rare result. Oh, and if you're preparing it on the BBQ and have a cast iron grill grate? Especially use it, because then you will get a delicious crispy crust. Make sure that the cast iron grill grate is blazing hot before you place the meat on it.
Prefer medium? Then aim for a core temperature of 57 degrees.

What Wine Goes with a 4 Bone Holiday Roast?
Such an impressive piece of meat on the table naturally calls for a good wine. With a 4 bone holiday roast, opt for a wine with sufficient tannins. This is because it competes with the fats in the meat, ensuring the flavor is truly balanced. Consider a nice Syrah, Malbec, Primitivo, or a sturdy Rioja. You won’t regret it, we promise!
Can the 4 Bone Holiday Roast Be Cooked on the BBQ?
The answer to this question mainly depends on what kind of BBQ you have in your garden, because cooking on the BBQ is perfect for this beautiful roast! Since it’s quite a large piece of meat, your BBQ must be large enough. Additionally, it’s important, if you want to cook it entirely on the BBQ, to be able to BBQ indirectly. After all, you preferably want to cook it at 120 degrees to reach the correct core temperature before finishing it with a sear (reverse sear).

All the meat you order from The Butchery is delivered quickfrozen to your home. How exactly does this work? We’d be happy to tell you more! To deliver the meat as 'fresh' as possible, upon arrival, it goes straight to production in technical parts. Here, our certified butchers immediately get to work with the finest meat to, for example, cut the steaks or roasts to size and remove membranes, etc. This way, you don’t have to do anything at home, and the steak or roast (after thawing, of course) can be placed directly in the pan/on the BBQ! Then the meat is carefully vacuum-packed and labeled with product information such as the expiration date and product name. Finally, the meat is frozen in a special way. Because we freeze the meat in a special way, the nutritional values are preserved and you thus experience very minimal quality loss. Even less quality loss than when it sits at the butcher around the corner in the display for a few days.
So you receive your meat quickfrozen. Need it within a few days? Place the meat in the refrigerator so it can thaw slowly. Otherwise, it can simply go back into your freezer at home!
