Beef Wellington is a beautifully classic roast, traditionally made with tenderloin. Every tenderloin for Beef Wellington has been handled by our Master Butchers. For Beef Wellington, it’s essential that the tenderloin maintains an even thickness along its entire length for perfect cooking. The tenderloins are carefully cut and double-trimmed. Afterward, the meat is individually vacuum-sealed and frozen within the hour. This process is called flash freezing.
