What is Asian Sliced Entrecote?

Asian sliced entrecote is essentially nothing more than thinly sliced entrecote, cut in a special way, in slices of 2 or 4 mm. These thin slices are ideal for Asian cuisine, for example Shabu Shabu, Korean BBQ, or Teppanyaki. Specifically for these cooking techniques, Master Butcher Bert-Jan Lantinga has delved into the technique to slice these pieces precisely as they should be.

We slice the entrecote for Asian cooking techniques into two different thicknesses. This is because different techniques require different thicknesses. For example, the 2mm slice is ideal for Shabu Shabu, Sukiyaki, and could also be used for Teppanyaki. Even better for Teppanyaki (and Korean BBQ) are the 4mm Asian sliced entrecotes.

What is Teppanyaki?

Actually, the name ‘teppanyaki’ already indicates what Teppanyaki is; teppan means 'iron plate' and yaki means 'grilled': grilling on an iron plate! Teppanyaki is a relatively new cooking technique in Japan, invented in 1945 by a Japanese restaurant chain, and quickly became popular outside Japan. The art of cooking on an iron plate actually existed in Japan for much longer, probably a hundred years or more ago. Back then, they grilled over the fire using a spatula. Essentially the same effect as Teppanyaki, but fortunately now it has become more hygienic and easier. In Teppanyaki restaurants in Japan, Japanese Wagyu is often served. But of course, you can also choose another breed, or pork. For side dishes, you can think of bean sprouts, zucchini, fried rice, and crispy garlic chips. You could also consider dips, but if you want to go fully traditional, serve it with only soy sauce.

How to Prepare Asian Sliced Entrecote?

Of course, how you prepare it entirely depends on what you want to do. In Teppanyaki, you grill the meat on an iron plate, in Korean BBQ on a tabletop BBQ, and in Shabu Shabu, you dip it into the hotpot.
They are all relatively short preparation methods. Did you know that in Shabu Shabu, the ingredients are not simmered all at once? Japanese Shabu Shabu is cooked bite by bite throughout the meal.

What to Eat with Asian Sliced Entrecote?

The ideal thing about Eastern cuisine is that you can choose what you want to eat with it. So whatever you don't like, you can simply omit. For example, you can nicely complement it with Asian Sliced ribeye or even with mini burgers if you go for Teppanyaki or Korean BBQ! I would say, go wild. You could think of hokusai (Chinese cabbage), green onions, mushrooms, and carrots. Since dips are also indispensable, you can choose from sesame sauce, soy sauce, or ponzu..

Which breed of entrecote you should choose depends on several factors. For example, if you want the full experience, especially choose Japanese Wagyu. Buying Shabu Shabu entrecote online is a piece of cake. At The Butchery, that is.. You have your order at home quickly, sometimes even the same day! It just depends on when you place your order. If you order before 11 AM, it will already be at your home in the evening! Prefer daytime delivery? No problem. In the checkout, you can easily choose your delivery day and delivery time. By default, we have already selected the fastest option, but you can also choose a day in the future. It's always smart to have your order arrive on time; you could just in case the driver has a delay the next day when you need it.
