What is a Ribeye Roast?

The Ribeye roast is, like the ribeye, cut from the beef rib. The ribeye is located between the shoulder and the loin and includes ribs six through twelve. In this part of the cow, you find more intramuscular fat, which provides the fantastic marbling in the ribeye. This fantastic marbling ensures that the roast is tender, flavorful, and has a nice bite. A ribeye roast is essentially nothing more than a ribeye in one piece. From a ribeye roast, you can slice ribeyes yourself, prepare the roast as one piece, or tie it into a roulade.

Ribeye Roast as a Sunday Roast?

The Sunday roast is often called the ultimate comfort food and is originally a (very nice) English tradition. After all, most people have time on Sundays to work in the kitchen (or in the garden with the BBQ).

The Ribeye roast is perfect for the Sunday roast. Serve it with potatoes, vegetables, and a good gravy. Oh, traditionally, the gravy of a Sunday roast is nice and thick. This is because flour is added to the gravy during preparation.

In the past, the Sunday roast was always served around lunchtime, but with the shift from eating warm food in the afternoon to the evening, the Sunday Roast has also shifted to the late afternoon. This way, you have the whole day to prepare the perfect roast and can enjoy a hearty meal in the evening.

A ribeye roast is therefore ideal for a Sunday roast, but if you prefer a leaner piece of beef, you can also choose, for example, an entrecote roast, a nice lamb shank, or chuck roast.

Is There Bone in Ribeye Roast?

The ribeye roasts we offer at The Butchery do not contain bone. If you prefer to prepare a nice ribeye roast with bone, you could choose the Prime Rib roast. A beautiful roast of ribeye with the bone attached. A bone in a ribeye roast mainly provides a beautiful effect during preparation, looks fantastic on the table, and adds an extra flavor dimension. Bone imparts flavor. On the other hand, with a ribeye roast (without bone), you can easily slice beautiful pieces.

How to Prepare a Ribeye Roast?

A ribeye roast can be prepared in various ways. You can cook it low & slow in the oven or on the BBQ, or you can sous vide it and then grill it. A ribeye roast also lends itself perfectly to Reverse Sear, where you first cook the steak (for example, on the BBQ) and then sear it.

Low & Slow

Make sure the meat is fully thawed and take it out of the refrigerator 5 hours before preparation. Preheat the oven or BBQ (indirect) to 120 degrees Celsius and ensure your pan or grill is heated to maximum. First, you will sear the roast, and after searing, you move the meat to the oven (or the indirect zone of your BBQ) and let it cook until it reaches the desired core temperature. Let the meat rest for another 10 minutes before slicing. Season the meat before slicing and you can serve it at the table!

Reversed Sear

With the Reversed Sear, you reverse the preparation method you read about in low & slow. First, (after thawing and bringing it to room temperature) you cook the roast in the oven or on the indirect zone of the BBQ. Here, we maintain a temperature of approximately 60 degrees Celsius. Cook your roast until it reaches a core temperature that is 2 degrees below your desired temperature. After all, you will sear it afterward, adding those degrees. Then, grill the meat brown and crispy to the desired core temperature. Let it rest for another 10 minutes before slicing. Season the meat before slicing and you can serve it at the table!

Sous Vide

Sous vide cooking and then grilling is a great method that almost never fails. With this method, it's also important to monitor the core temperature of your meat.

Ensure that your meat is thawed before you start and let it come to room temperature over a few hours. Then, preheat the water bath to 52 degrees for rare, 54 degrees for medium rare, and 57 degrees for medium. Double-check the vacuum, as the bag must be truly sealed before it goes into the water bath, and sometimes a small damage can occur during transport. Checked? Great! Then place the roast in the vacuum-sealed bag into the water bath. Let it sit for three hours. After those three hours, sear it until golden brown in the pan or on the BBQ. Let the ribeye roast rest for another 10 minutes before slicing, season the roast with pepper and salt or a rub of your choice, and you can serve it at the table.

Which Wine to Pair with Ribeye Roast?

With ribeye roast, you can actually follow the same wine advice as with ribeye. After all, it's the same meat, just a different size. Ribeye roast also calls for a nice, sturdy red wine, preferably a spicy one. Pay particular attention to selecting wines that have plenty of tannins. Tannins will interact with the fat in the meat, making the meat lighter and the wine smoother. A Syrah, Malbec, Primitivo, or a robust Rioja are therefore good choices!
