What is a rack? A rack is a rib piece with the bone neatly trimmed. The most commonly eaten rack is perhaps lamb rack, but you also have racks from pork and beef. Rib roast, it is also called that. A rack roast is not only very tasty but also looks festive. Absolutely a beautiful roast to serve at an occasion!
What is a Lamb Rack?
A lamb rack is cut from the back of the lamb, with the characteristic bones still attached. You then prepare it with the bones to carve it between the bones at the table and serve it. Lamb rack is also known as lamb carré in culinary circles.
A 'frenched' lamb rack means that the lamb rack has been 'cleaned'. This means that the bones are nicely clean and the excess fat has been removed. Of course, some fat always remains, as fat is an important carrier of flavor.
What is a Pork Rack?
A pork rack is also known as pork rib roast or pork ribroast. The pork rack is usually cut from the loin of the pig, with the bone still attached. All remaining membranes are expertly trimmed by our butchers and then neatly portioned. The Butchery offers pork racks from the finest pig breeds in our assortment, such as the Spanish Iberico pig, the Duke of Berkshire pig, or our Dutch LIVAR pig. Whatever breed you choose, you are assured of good origin and fantastic quality. The breeds are carefully selected, and the racks are handled by skilled butchers.
What is the Function of the Bone in a Rack?
A bone in a rack certainly looks impressive, but did you know it also has a function? Meat with bone is always more flavorful than meat without bone. Additionally, the bone holds the meat together nicely during preparation. So it's a win-win! Therefore, especially keep the bone in during the preparation of these beautiful racks. After cooking, you can easily remove it.
What Core Temperature for a Rack?
The core temperature you should maintain when preparing a rack depends on which rack you choose. Although you can safely eat a lamb rack rare, we do not recommend this for a pork roast. For a lamb rack, we recommend a core temperature of about 55-57 degrees Celsius for a medium rare result. For a pork rack, maintain a core temperature of 62 degrees to then let it rest quietly for another 10 minutes in aluminum foil.

Rack Quickfrozen Delivered
You might have already read it, but all the meat you order from The Butchery is delivered quickfrozen and is fresher than fresh. Our butchers freeze it immediately after production in a special way, ensuring that nutritional values and quality are preserved. For the best results, you can let the meat thaw slowly upon receipt or before you need it. Keep in mind that a larger piece of meat takes longer to thaw. The best method to thaw is to place the rack in the refrigerator. In a hurry? Then you could also choose to place the meat in cold water. Just make sure that the vacuum packaging remains completely intact.

When you order a rack online, you can have it at home super quickly. We deliver during weekdays on the same evening. So if you order before 11 am, it will be at home that same evening! Our courier Trunkrs handles the evening delivery for us. Since it is not conditioned transport, your order is carefully packed in an insulated bag with a generous scoop of dry ice. So it definitely arrives frozen at your home!
Prefer daytime delivery? From Tuesday to Saturday, we deliver all over the Netherlands with our transporter Leen Menken. They provide conditioned transport, so the items go directly into the box.
