What is an Entrecote Roast?

The entrecote roast is, like the entrecote, cut from the thin loin of the cow. The thin loin is located between the tender rib and the thick loin. The entrecote roast is recognizable by the fat cap on top of the steak. Make sure to leave this on during preparation, as fat adds flavor and you can always trim it off after cooking. The entrecote roast is essentially just entrecote in one piece, so you can slice entrecotes yourself or tie it into a beautiful entrecote roulade.

Entrecote Roast as a Sunday Roast?

Absolutely! The entrecote roast works perfectly as a Sunday roast. So if you have a Sunday roast planned, feel free to order the entrecote roast. After all, when properly prepared, it is true comfort food, which is exactly what the Sunday Roast tradition is known for. We find it a beautiful English tradition! Serve it with a nice gravy (thick jus), where you add some flour during preparation. The flour makes the jus nice and thick.

Is There Bone in Entrecote Roast?

What Core Temperature for Entrecote Roast?

When preparing a beautiful entrecote roast, as a true steak lover, you naturally don't want it to be overcooked. Therefore, always keep a core thermometer handy when preparing such a magnificent piece of meat. But what core temperatures should you maintain?

> Rare > 50-52°C
> Medium Rare > 53-55°C
> Medium > 58-60°C

How to Prepare Entrecote Roast?

Entrecote roast can be prepared in various ways. Below, we provide you with three techniques. Whether you're cooking it on the BBQ, in the oven, or in the pan, always keep the core thermometer handy, as you'll need it with all these techniques.

Low & Slow
The name of this technique already reveals how you should prepare the roast: at a low temperature, slow cooking. But first things first... Make sure the meat is fully thawed and take it out of the refrigerator five hours before preparation. This allows the roast to come to room temperature. Preheat the BBQ (indirect zone) or the oven to 120 degrees Celsius and ensure your pan is well heated. You will first sear the entrecote roast. Does the roast have a nice brown crust? Great! Then you can place it in the oven or on the BBQ so it can continue to cook. From then on, keep a close eye on the core temperature. You need to remove the entrecote roast from the BBQ or the oven as soon as the desired core temperature is reached. Finally, let it rest for 10 minutes in aluminum foil before slicing and serving at the table!

Sous Vide
Another great technique to cook a roast is sous vide. Because with this technique you also control the core temperature, it almost never fails. First, ensure that the entrecote roast is at room temperature. Fully thaw it five hours in advance by taking it out of the refrigerator. Double-check the vacuum for this technique, as you will be placing it in water. It is important that there are no small damages to the packaging. Although we thoroughly check the packaging before shipping, it can happen that something shifts during transport, causing a small damage to the packaging. All checked? Great! Then you can place the roast in the preheated water bath at 52 degrees for rare, 54 degrees for medium rare, and 57 degrees for medium. You can achieve this water bath temperature with, for example, a sous vide stick. Let it sit in the water bath for three hours and then sear it until golden brown in the pan or on the BBQ. Let the ribeye roast rest for another 10 minutes before slicing, season the roast with pepper and salt or a rub of your choice, and you can serve it at the table.

Reversed Sear
Here, the name also gives away what to expect with this technique. You essentially reverse the preparation method you read about in low & slow. So you first cook the roast and then sear it. It actually resembles sous vide cooking! However, with reversed sear, you first cook it indirectly on the BBQ or in the oven at a temperature of approximately 60 degrees and not in a water bath. Cook it until the desired core temperature minus 2 degrees, and then sear the entrecote roast. Let it rest, season, and you can serve it at the table!

Which Wine to Pair with an Entrecote Roast?

Wine and entrecote roast are a perfect match! They balance each other beautifully, enhancing the flavors. Choose a nice, powerful red wine with a sturdy structure. You can think of a Syrah, Cabernet Sauvignon, or Sangiovese. When adding a sauce to the entrecote roast, don't forget to adjust your wine to match the sauce.

Entrecote Roast Quickfrozen Delivered

Immediately after we receive the meat, it is trimmed to perfection by our Master Butcher and then portioned. After portioning, the roast is vacuum-packed and labeled with a product sticker. Then we freeze it in a special way within an hour, ensuring all nutritional values are preserved for optimal quality retention. Quickfrozen, therefore! On the day of delivery (in the case of evening delivery), we take the ordered meat out of the freezer and carefully pack it. We place the meat in insulation bags in boxes with a scoop of dry ice. The dry ice keeps the meat cold for about 24 to 48 hours (depending on the outside temperature). This way, the meat is delivered frozen to your home.
