What is Rollade?
A rollade is essentially nothing more than a rolled, seasoned, and tied piece of meat, to put it very simply. But it’s never that easy, of course. It starts with selecting the appropriate meat for a rollade, after which craftsmanship is involved to roll and tie it to perfection. Tying it is an art in itself, as the strings must be tight and any filling must, of course, be well in place. During the festive months, our butchers always take great pleasure in tying rollades, as it remains a classic on the festive table!
How Did Rollade Originate?
We cannot tell you exactly when rollade originated. However, it goes back a long way, to a time when there was no rope. Can you imagine? We can hardly. In the past, according to stories, they held the pieces of meat together with leaves and cooked them in a pit with stones that were heavily heated. Low and slow, indeed! In the past, the rollade was also seasoned with herbs and vegetables that they could find in nature, not the nice spice mixes we know today!
Pork Rollade, Beef Rollade, or Chicken Rollade?
The options for rollades are vast! Different types of meat, different breeds, and different weights. So there is probably a rollade that perfectly suits your taste! Additionally, there is always a distinction between lean or well-marbled meat for the rollade. A chicken breast rollade is naturally leaner than a chicken thigh rollade, and a chuck rollade is more marbled than a pork tenderloin rollade.
Rollade from the Oven
A rollade can be perfectly roasted in the oven or in the pan. Just the way you like it! Although the oven is very convenient, you only need to occasionally pour a spoonful of cooking fat over the rollade. The oven does the rest! What is a Good Core Temperature for Pork Rollade?
We can give a short answer to this question: A good core temperature for pork rollade is 63-65 degrees Celsius.
What is a Good Core Temperature for Beef Rollade?
For most beef rollades, you can follow these core temperatures:
Rare: 52°C
Medium/Rare: 54°C
Medium: 57°C
Rose/Well-done: 62°C
Exception: Do you have a chuck-eye rollade? Then it's a bit different. This rollade needs to be cooked slightly more than a rollade from the tenderloin or ribeye. Here, you should aim for a core temperature of 65 degrees.
What is a Good Core Temperature for Chicken Rollade?
You want to serve a chicken rollade cooked and juicy. For chicken, we recommend maintaining a core temperature of 72 degrees Celsius. Another trick to check if your chicken rollade is cooked is to cut into a piece. Is the juice clear? Then your chicken rollade is done!

Rollade Quickfrozen Delivery
Maybe you've already read it, but all our meat is quickfrozen delivered to your home. So are the rollades. Are you worried that it’s less fresh because the meat has already been frozen once? No reason to! Immediately after the meat arrives, it goes into production. Here, the meat is trimmed and, for example, tied into a rollade. This rollade goes into a vacuum bag, a product sticker is applied, and it is frozen within an hour. Freezing is done in a special way, super quickly! If you freeze at an extra low temperature, the quality remains preserved. This means that the nutritional values, minerals, flavor, and structure are fully retained. Fresher than fresh, indeed!
