LIVAR ROLLED PORK COLLAR ROAST
A roulade made from a LIVAR tenderloin, also known as pork neck, is one of the most popular roulades. The meat is very popular because of its beautiful marbling, which ensures wonderfully tender and juicy meat. Besides the fact that the meat is very tasty, it is also very easy to put on the table!
WHAT IS A PORK COLLAR?
Pork collar is a versatile cut of meat that comes from the neck of the pig. The meat has a lot of intramuscular fat that melts away during the preparation of the meat. This ensures that many natural flavors are released, making the meat juicier and more tender. Because of the fat, the roulade will dry a lot less quickly than roulades from other parts of the pig. This roulade has been seasoned and hand-knotted by our master butchers, so you can serve it to the table without too much effort. Do you want to know how? LIMBURGS MONASTERY PIG
This procured roulade is made from LIVAR meat, also known as Limburg monastery pig. The Butchery is an official LIVAR dealer and we are very proud of that. LIVAR is the only pork concept that has been awarded 3* better life by the Animal Protection Society and you can certainly taste this in the characteristic taste of the meat. The brightly colored LIVAR pigs come from the Lilbosch Abbey in the Limburg town of Echt. The pigs are cared for with a lot of love by monks and can root and roll in the mud in the monastery gardens. The animals are fed freshly grown Limburg grains there and you can really taste it. We think it's great to see that the attention given to the animals translates directly into great taste!
