What is a Pork Roast rack LIVAR?

A pork roast rack is a portion of ribs with a fillet attached. With cleaned bones, a pork roast rack is an ideal piece of meat to cook whole. The bones provide even more flavor. Fantastic marbled meat - as we are used to from LIVAR - and with a good fat layer for tasty and juicy meat.

The Butchery is an official dealer of LIVAR and that is something to be proud of. LIVAR is in a class of its own when it comes to pork. The origin of brightly colored LIVAR pigs lies at Lilbosch Abbey in Echt, Limburg. There the animals were lovingly cared for by monks and the pigs can root and roll in the mud in the monastery gardens. Of course, not all pigs still live at Lilbosch Abbey, but they do live on the most beautiful free-range farms. LIVAR pigs' meals consist of freshly grown Limburg grains and you can taste that good life! Pork with a golden edge.

How do you prepare pork roast rack?

A pork roast rack may seem like a challenge to prepare properly... But with the right tools, anyone can do it! Because it is such a large piece of meat, it is easiest to prepare the pork roast rack in the oven or on the BBQ (indirectly). Make sure you use a core thermometer and maintain a core temperature of 64 degrees for light pink or >70 degrees for well done.
