What is a Boston Butt?
Despite the name, the Boston Butt doesn't come from the rear of the pig, but from the shoulder section. It’s a large cut from the upper shoulder, including part of the shoulder blade. This relatively coarse, but juicy piece of meat is packed with intramuscular fat and connective tissue, perfect for slow cooking. During a low, slow preparation, the collagen fibers break down, causing the meat to fall apart and develop a tender, silky texture. This cut has been a staple in American BBQ for centuries, most famously as the base for authentic pulled pork. The term "Butt" actually refers to the wooden barrels, or "butts", in which the meat was historically stored and shipped from Boston.

These pigs are raised at Lilbosch Abbey in the town of Echt, where monks care for them, and they’re free to root around in the monastery gardens. Their feed consists of freshly grown Limburg grains, and the living conditions are exceptionally high. Livar pork is the only pork in the Netherlands to have received the 3-star Beter Leven quality mark from the Dutch Animal Protection Society. And you can taste the difference. The meat is deeply marbled, full of flavor, and incredibly juicy, a perfect example of how care and respect for the animal translate into top-quality meat on the plate.
