The loin comes from the finest part of the deer, the back. The meat has a delicate texture and is exceptionally tender. Because it comes from wild deer that roam freely in nature, it has a distinctive, aromatic flavour that perfectly suits the season. PREPARING VENISON LOIN
Venison loin is one of the finest cuts of the deer. Delicate in texture, mild in flavour and with that subtle game aroma that immediately brings autumn to mind. A true festive centrepiece that needs very little to shine, provided it is prepared well.
- Allow the venison loin to thaw slowly in the refrigerator and remove it well in advance so it can come to room temperature. This ensures even cooking.
- Pat the loin dry with kitchen paper. This helps form a beautiful crust during searing.
- Season the meat generously with salt, pepper and, if you like, some fresh thyme or rosemary. These herbs enhance the elegant, earthy flavour of the venison.
- Heat a knob of butter or a little oil in a pan and brown the loin evenly on all sides over medium heat. Take your time so the meat does not sear too hard.
- Transfer the venison loin to a preheated oven at 160 °C and let it cook gently until it reaches a core temperature of 54 to 56 °C for a perfectly pink result. Count on about 10 to 15 minutes, depending on the thickness of the cut.
Remove the loin from the oven, cover it loosely with aluminium foil and let it rest for 5 to 10 minutes. This allows the juices to settle beautifully, leaving the meat tender and buttery soft.
