What is a mustard fillet steak?

A mustard fillet steak is a fillet steak in a fine mustard marinade and then wrapped in lean smoked bacon and onion rings.

The meat is cut from the boned back of the pig, lean meat with an edge of fat on the outside, which ensures that the meat remains nice and juicy. Pork fillet has a fairly neutral taste, so it is perfect for marinades or spice mixtures. Delicious meat, fine in grain, not too fatty and - if prepared properly - still nice and juicy! Mustard fillet steak LIVAR

This mustard fillet steak comes from LIVAR, a class of its own when it comes to pork. The origin of these pigs lies at Lilbosch Abbey in Echt, Limburg. There the animals were lovingly cared for by monks and the pigs can root and roll in the mud in the monastery gardens. Of course, not all pigs still live at Lilbosch Abbey, but they do live on the most beautiful free-range farms where they are still raised with care and fed with freshly grown Limburg grains. Pork with a golden edge and certainly comparable to the best free-range pigs from Spain and Italy.

How to prepare a mustard pork medallion?

A mustard pork medallion is wrapped in lean smoked bacon. Since you don’t want to end up with burnt bacon around your medallion, it needs to be cooked with some love and attention. This means you should cook it for about 5 to 7 minutes - the exact time depends on the thickness of the medallion - over medium heat until it is cooked through. Use plenty of butter to ensure the flavor of the meat is at its best!
