What is Porchetta?

Porchetta (read: por-ketta) is cut from pork belly (belly with loin) of - in this case - the LIVAR pig. It is a typical Italian classic, made from layers of rolled pork and herbs. Porchetta is then roasted in the oven for a long time. It takes a while, but then you get something. Because Porchetta comes out of the oven after about three hours with a crispy jacket and a tender interior. Divine flesh and of LIVAR absolutely impossible to resist...

Porchetta from LIVAR

This porchetta comes from LIVAR, the pig breed that 'started' in the monastery gardens of Lilbosch Abbey in Echt, Limburg. There, the animals are lovingly cared for by monks. NowadaysLIVAR pigs no longer roam around at Lilbosch Abbey, but they do all grow up under strict supervision. In addition, LIVAR is constantly working to make its farms even more animal-friendly. Taste as a reward for good care is the slogan and we dare to say with certainty that no word of that is a lie.
