Gorgonzola burgers with cranberry compote, pancetta, and grilled apple

Ingredients

2 Black Angus burgers with gorgonzola and cranberry
4 slices Pancetta with black pepper
1 Red onion, thinly sliced
1 Apple (e.g. Elstar or Jonagold), thinly sliced
2 Brioche buns
Sunflower oil or butter
Salt to taste
Cranberry compote
100 g Dried cranberries
100 ml Orange juice or water
1 tbsp Honey or brown sugar
1 tsp Balsamic vinegar
Pinch of cinnamon

We love burgers and we love food pairing – so how great is it when our ambassadors feel the same? Robert van Dijk from @vurigekolen created this beauty with our gorgonzola cranberry burgers [highly recommended!], cranberry compote, crispy pancetta, and grilled apple. And wow… what a combo again.

Preparation – Gorgonzola Burgers

Prepare the BBQ for direct heat and place a skillet on the grate. Let it get nice and hot. Put the cranberries with the juice in a saucepan and bring to a boil. Let simmer for 10 minutes until softened. Add honey, cinnamon, and balsamic vinegar. Mash roughly with a fork or immersion blender and let cool.

Heat a little oil or butter in the skillet on the BBQ. Add the red onion and cook slowly until soft and glossy. Optionally add a pinch of sugar. Set aside.

In the same skillet, fry the pancetta until crispy. Drain on kitchen paper.

Grill the burgers and apple slices directly on the BBQ grate.

Cut open the brioche buns and toast the cut sides briefly on the BBQ until lightly crisp.
