The Tapilla, also known as the top part of the rump or “cap,” is a relatively unknown but highly prized cut in the Iberico kitchen. This compact, lightly muscled piece is full of flavour, thanks to its high level of intramuscular fat. When cooked at a high temperature, the fat caramelises beautifully, forming a crispy crust around a tender, buttery centre. This combination of texture and fat makes the Tapilla not only incredibly juicy, but also extremely versatile. The Tapilla comes from the Cerdo Ibérico Bellota, a special breed that roams freely in the dehesas of southwestern Spain. Here, the pigs live in complete freedom and feast during autumn on kilos of acorns from cork and holm oaks. These acorns give the meat its signature taste and contribute to a uniquely healthy fat structure, rich in monounsaturated and polyunsaturated fatty acids.
